Menu for Week of May 27th

This week's menu has a lot of delicious food for the foodie! We are enjoying having guests over more since the weather is getting warmer. Plus, we are having a great time on the first week of summer vacation. Here are the menus to impress your guests! Feed your family of four this week for breakfast, lunch, dinner, and some dessert for only $23 each. A total of $93 for the week. Plus, it's less if you noticed that the bell peppers and onions are used in several of the recipes, which will bring the price down to under $85 or $21.25 each. :)


Breakfast:
Pancake, Bacon and Egg Sandwich, total cost: $ 8.25

1.  Cook off the bacon and set aside on napkins to drain grease.
2.  Spray skillet with cooking spray. Crack egg in skillet, and break the yolk a bit to cause it not to be too runny.
3.  Heat pancakes as directed on box.
4.  On one pancake, place the eggs and top with shredded cheese on top of the eggs, top with bacon, and then another pancake.

·        Publix Concord Foods Original Hollandaise Sauce Mix, 1.6 oz.

1.  Fry eggs over easy.
2.  Toast English muffins.
3.  Patty out and fry sausage until it reaches an internal temp of 165°
4.  Make hollandaise sauce according to the package.
5.  Put together: English muffin, egg, sausage, and hollandaise sauce.

Lemon Pepper Chicken Thighs, total cost: $18.11

·        1 Lemon sliced thin

1.  Preheat oven to 375°
2.  Place chicken on sheet pan and season with salt and pepper. Add sliced lemon on top. Sprinkle with a pinch of black pepper. Bake until it reaches the internal temp is 165°
3.  Slice zucchini in half moon shapes and set aside.
4.  Slice ½ of the red, yellow, and orange pepper and ¼ of the onion into strips.
5.  Sauté zucchini in 2 Tbls. Oil for 2 minutes, add peppers and onions. Add salt and pepper.
6.  Bake potatoes until done and let cool.
7.  Use spoon to scoop out potatoes into a bowl. Mash with ¼ minced onion, 1 tsp minced garlic, and ¼ c of Ranch dressing. Season with salt and pepper to taste.
8.  Return mashed potato mix back to skins on top and add your choice of cheese.
9.  Reheat potatoes at 350°



Blackened Pork Chop with Mango Corn and Peach Salsa, and Roasted Tomatoes total cost: $16.76

1.  Season both sides of pork chop with Cajun seasoning and place on a pan. Bake at 375° until it reaches an internal temp of 165°.
2.  Peel and seed a cucumber. Dice along with the mangoes, peaches, ¼ onion, ¼ pepper each, and toss together.
3.  Boil corn until tender. Let cool and cut from cob. Add to fruit mix. Mix together and season with a small pinch of salt and pepper.
4.  Toss tomatoes with 4 Tbls. of oil, salt, pepper, 1 Tbls. of minced garlic, 1 pinch of paprika, and bake at 400° on a sheet tray for about 5 minutes.

Shrimp Alfredo with Italian braised Squash and Tex Toast, total cost: $ 15.79

1.  Boil pasta according to directions, drain, and return to pot. Toss with Alfredo sauce.
2.  Steam shrimp until lightly pink and tender.
3.  Cube squash and sauté in 4 Tbls. of oil. with ½ minced onion, 2 Tbls. garlic, 1 tsp Italian seasoning, until squash is tender.
4.  Cook toast as directed on box.

1.  Heat the meatballs according to the package.
2.  Heat sauce and toss with hot meatballs.
3.  In 2 Tbls. of oil, sauté onions until translucent, add peppers, 1 Tbls. minced garlic, 1 pinch Italian seasoning. Cook until peppers are tender.
4.  Place meatballs on flat bread. Add peppers and onions.
5.  Slice mozzarella. Add to sandwich. Broil on low until cheese is melted.
