Menu for the week of July 15th



The summer holidays are all over now, but we are still celebrating! Here are some great recipes to eat with friends and family. Remember that each recipe can serve around 5 people. This week’s menu total is around $68. That’s an average of $2.30 per person per serving a week! So much better than going out to eat.

Breakfast:
Sausage and Tomato Biscuit
Total Cost: $3.50

Pork Chops
With Steamed Broccoli and Baked Potato
Total Cost:  estimated $14

·       1 Bag of Publix Russet Potatoes, 5 lbs.

·       Minced garlic, rosemary, thyme, sage, oil
1.   Preheat oven to 325°. Place pork chops on sheet tray. Season both sides of meat with salt and pepper, minced garlic, rosemary, thyme, and light sage. Cook uncovered until it has 165° internal temperatures.
2.  Wash potatoes. Stab with fork. Then season with salt and pepper. Bake until tender.
3. Cut broccoli into spears and steam. Toss lightly with oil, salt, and pepper.




Cajun Mahi Mahi Fillets
With Dirty Rice and sautéed Zucchini

1.   Preheat the oven to 350°. Season both sides of the fillets with creole seasonings.
2.  Prepare rice according to directions on box.
3. Cut zucchini in to bite size pieces. Sauté zucchini in oil until tender. Season with salt and pepper.






Beef Pot Roast
Total Cost: $12
·       2 lbs. Publix Shoulder Roast

o   Use out of bag purchased for London Broil ($2.99 for 5 lbs.)
·       1 lb. Kroger Baby Carrots, 16 oz.

1.   Cut celery into 1 inch lengths quarter onions and quarter potatoes.
2.  Preheat oven to 350°. Place roast and all of the vegetables in a baking pan. Cover with foil until roast is tender.
3. Season with salt, pepper, and 2 tsp. minced garlic.

Baked Chicken Breast
with Gratin Potatoes and Sautéed Spinach

·       1 onion
·       Oil, salt, pepper, minced garlic
1.   Preheat oven to 375° and season chicken with your favorite seasonings. Bake until chicken reaches internal temperature of 165°.
2.  Prepare potatoes according to directions on the box.
3. Wash and clean spinach. Roughly chop the spinach.
4. In a pan, heat 2 tbls. of oil. Add onions, spinach, and 2 tbs. minced garlic. Sauté until tender and season with salt and pepper.
